How to Make Sirloin with Almond Sauce?

For the Sirloin

  • 500 grams of pork tenderloin
  • 3 bay leaves
  • 1 sprig of thyme

For the Almond Sauce

  • 1 onion
  • 2 cloves of garlic
  • 1/2 cup of white wine
  • 1/2 cup of evaporated milk
  • 1/4 of a cup of chopped almond

Other Ingredients

  • Salt
  • Pepper
  • Virgin olive oil

Steps to Follow to Make this Recipe:

Step 1:

As it elaborates with multiple ingredients, we suggest you prepare the mise en place of everything you will need previously. Thus, you will have all the ingredients at hand and in their proper quantities, so it will be very easy to follow the sirloin recipe in the almond sauce without leaving anything behind.

Step 2:

Once you have the ingredients together and in their respective quantities, we will start by cleaning the sirloin. The ambition of this step is to remove any excess fat you may have. Do it with the help of a knife, removing the whitest parts. In case you want to save yourself this step, you can ask the butcher to leave the sirloin ready for cooking.

Step 3:

Step 7:

When the onion begins to turn transparent, it will be time to add the chopped almonds to toast them. Remember to constantly stir the sauce to prevent any ingredient from burning.

Step 8:

When you notice that the almonds have browned slightly, add the evaporated milk. Let the combination cook over medium heat until it starts to boil. During this time, if you want, you can rectify the amounts of salt and pepper.

Step 9:

As soon as the sauce is set up to boil, you must remove it from the heat and place it in a blender to achieve a sauce with a smooth and homogeneous texture. When it is well passed, you can do one last test to see if it needs to be seasoned more, or it already has the perfect flavor of a good almond sauce.

Step 10:

The time to serve has come! Recover the sirloin that you have previously set aside and cut it into slices. Then, bathe it with the almond sauce that you have prepared on top, and that’s it! You already have your plate of sirloin with almond sauce ready to taste and enjoy.

Step 11:

To make the dish much more complete, you can accompany it with some oven-roasted potato wedges, three delights rice, a little pasta, a rich salad, or some grilled asparagus.
